200 g of sugar and 200 g of flour
150 g of extra virgin olive oil
5 Eggs
10 g of yeast powder and lemon zest
Vanilla
½ Zucchini
Dark chocolate
For the toffee sauce:
200 g of sugar, lemon juice and 200 g of liquid cream

We mix the eggs and sugar. When everything is well mixed we add the oil little by little. Then we add the previously sifted flour and yeast and mix in an enveloping way. Add the lemon zest and vanilla. We remove.

To this mixture, we add the zucchini and the chocolate cut into small cubes.

Fill the molds with the help of a jug up to ¾ high and place them on a barbecue tray.

Close the lid of the barbecue and let it cook indirectly at 200ºC for about 20-25 minutes.

Next we make the Toffee sauce. In a saucepan that we have put on the barbecue grill, add sugar, water and a little lemon juice and wait until it becomes a blond caramel. Add the liquid cream and mix to make the toffee.

We place the muffins with the toffee sauce and serve. If you feel like it, you can add cream, some fruit or just the muffins, to your liking.

In general, when preparing fruits to grill, you must take into account their shape, consistency and meatiness, so that you prepare them in the best possible way so that they do not spoil in the process and are well roasted. It is also important to know the roasting times that each type of fruit needs, to leave them at their point.

Fibrous fruits with seeds: Roast them in slices or halves. Apples, pears, pineapples and pieces of this type are perfect. They usually need a longer cooking time.

Fleshy fruits: those that are of the type of plums, peaches, nectarines or cherries are better on skewers, to make good use of all the meat. The same happens with plantains and bananas. Dice them, assemble the skewers, and twist them. Watermelons, melons and the like are best roasted in thick slices.

Fruits in syrup: the way to roast them is by wrapping them in aluminum foil and putting them on the grill or between the almost extinguished grill (as is done with potatoes roasted over the fire).

The rest of fruits, such as citrus fruits and, especially, berries and red fruits (such as strawberries or raspberries), are not suitable for grilling, since due to their meatiness, in the case of red fruits, they are undone in the process. If you want to give them an even more delicious touch, you can sprinkle them with a mixture of sweet spices to taste, accompany them with chocolate or cream, paint them with brown sugar and cinnamon once they are roasted. You can also pair them in advance in some type of alcohol that you like.

5 medium lemons
1 more lemon, sliced
200 g of brown sugar
4 glasses of water and the same glasses of ice

Preparation

Wash the lemons, cut them in half, dip each half in sugar until you get a thin and even layer.
Put the lemons on the grill and cook them until they are caramelized.
Remove the lemons. Let it rest for five to ten minutes and squeeze the juice into a pitcher. Add the rest of the sugar, water, and ice. Stir until dissolved.
Finish by putting some lemon slices, also made on the barbecue, for a few minutes. If there are no children, you can add some alcohol, for example rum is good for them, or else another one that you like more.
You can also give it a special touch by adding mint, ginger or whatever you like.
